Three-Ingredient Fermented Rye Porridge

EXPERIMENT

Rye flour, water, salt — fermented for 36 hours. No dairy, no sweetener, no shortcuts. Does fermentation alone create complexity?

RESULT

Yes. By hour 36, the sourness was balanced by something almost nutty. With brown butter poured over it was extraordinary. With nothing — still very good. This is the most Nordic thing I have ever made and I'm not sure if that's a compliment.

Lingonberry and Black Pepper Ice Cream (No Machine)

EXPERIMENT

Lingonberries are too sour to eat alone but too interesting to cook down into jam. What if I put them in an ice cream — no machine, folded cream — with aggressive black pepper?

RESULT

The pepper was the right call. It cut through the fat and amplified the tartness of the lingonberry rather than fighting it. No machine ice cream is softer and denser than churned — which worked better here. Failed experiment becomes a staple.
